Jack Timmons, “The Brisket King,” opened Jack’s BBQ in Sodo in 2014, already having built a loyal following through a series of pop-ups. Lines out the door quickly became commonplace, and now you’ll find Jack’s BBQ in several neighborhoods throughout the greater Seattle area. Jack’s pays homage to the old-school barbecue of Central Texas, and their low and slow smoked brisket has earned legions of local fans. We’re thrilled to announce that we’re partnering with Jack’s to use their Smoked Jalapeño BBQ Sauce on our BBQ Chicken Primo. The seasonal pie features roasted Hatch chiles, long green peppers with medium spice and a distinctive smoky flavor, chicken, pickled red onions, and mozzarella over Jack’s Smoked Jalapeño BBQ Sauce. We finish the pie with a sprinkle of fresh cilantro.

Our second seasonal pizza, Bacon Leek Primo, showcases Pike Place Market’s Beecher’s Flagship, made by Beecher’s Handmade Cheese (another Seattle spot with an ever-present line). The assertive, sharp cheddar with a gentle sweetness melts beautifully, making it a great pizza cheese. Our Bacon Leek Primo combines the award-winning cheese with crisp bacon, mozzarella, and earthy, roasted leeks. After baking, we top the pie with fresh peppery arugula.
