Eggnog "Ice Cream" Sandwiches

Planning to set out a tray of treats for the big man in red? We’ve got just the thing! We teamed up with our friends at Gelatiamo for a creamy confection that will send you to the top of the nice list – both with Santa and your friends.

Eggnog “Ice Cream” Sandwiches

Ingredients

1 pint Gelatiamo Eggnog Gelato

*1 box store-bought ginger molasses or snickerdoodle cookies

Directions

1. Working quickly, scoop about 1/8th cup gelato and place it on the bottom side of a cookie. Top with a second cookie, bottom side down, and press gently until the gelato reaches the cookie edges.

2. Place the sandwiched cookies on a plate in the freezer while you continue assembling the other sandwiches.

3. Repeat the steps above until all of the sandwiches are made. Once the sandwiches are frozen and firm, enjoy right away or transfer them to a sealed container and keep frozen.
