Scientifically speaking, it’s the fifth taste alongside sweet, salty, bitter, and sour. Mushrooms are a great source of umami, which leads to the real reason we’re talking about it. Our Mushroom Primo brims with a rich, earthy umami from our Foraged & Found Edibles blend of chanterelle, king oyster, and brown shimeji. We combine the thyme-roasted fungi with onions and a trio of cheeses — provolone, mozzarella, and Parmesan — over roasted garlic oil and fresh garlic. Fresh from the oven, we top it with a sprinkle of fresh parsley. 

Second to none, our Butternut Sage Primo is defined by butternut squash, sage, prosciutto, and chanterelles. The squash, roasted to intensify its nutty sweetness, pairs with crispy, fried sage leaves that explode with flavor. Prosciutto, sliced paper-thin, lends a delicate, salty depth, while wild chanterelles from Foraged & Found Edibles add earthy complexity. This savory mix rests on a creamy blend of mozzarella and fontina atop a roasted garlic oil base.
