Vendor relations in the food business are provisional and rarely last for decades. But sometimes a special partnership develops that defies the norm. Pagliacci has been using meat from Cascioppo Sausage from the start. In 1979, Cascioppo’s was operating out of the back of a small market called Ballard Locks Grocery and Deli.
“We were the only Italian joint in the primarily Norwegian neighborhood of Ballard,” Tony says. Cascioppo’s had been in business just six years then.
Dorene Centioli-McTigue remembers them delivering sausages to Pagliacci. “They always wore fresh, white butcher coats. We used their sausage from the very first day. It was part of the Brooklyn Bridge, always a big seller. And their sausage is the star of the South Philly.”
Many years later, Cascioppo developed meatballs from an old family recipe for Pagliacci. We use them on our seasonal meatball pizza. Our latest rendition is for anyone who’s ever fallen hard for the gooey, saucy meatball sub. Seattle’s Cascioppo Sausage makes these meatballs for Pagliacci. They’re tender and flavorful. Our Meatball Marinara features tender and flavorful Cascioppo meatballs over a base of mozzarella and crushed Italian tomatoes, with dollops of fresh ricotta, a drizzle of tangy marinara sauce, and grated Parmesan.

Our second seasonal, the Prosciutto Fig, is inspired by the abundance of ripe local figs, which always leads us to the quintessential Italian combo of fresh figs paired with delicate prosciutto. The balance of salty and sweet, fruity and meaty, is just about perfect. We layer farm-fresh figs and premium prosciutto over creamy, fresh mozzarella on a roasted garlic olive oil base. Out of the oven, we finish the pie with fresh basil.

For dessert, we have a limited-edition special flavor — Molly Moon's Peaches & Cream — available exclusively through Pagliacci. LaPierre Farms, located in the Rattlesnake Hills near Yakima, grows some of the tastiest peaches in the state. Molly Moon’s cooks the juicy, peak-flavor peaches, certified organic and sustainably grown, into a thick jam and swirls it into a sweet cream vanilla base made with fresh, local, hormone-free milk and cream. This limited-edition flavor is only available through Pagliacci. Order a pint and enjoy it while it lasts.

We’ve also just added a collaboration between Hello Robin and Molly Moon’s: the Vanilla Chocolate Chip Cookie Ice Cream Sandwich. It features a generous helping of Molly Moon’s Sweet Cream sandwiched between two of Hello Robin’s Classic Chocolate Chip cookies. Need we say more?

Our seasonal beer is Pizza Castle Helles Lager from No Boat Brewing. Its blend of imported and domestic Pilsner malts gives a cracker-clean, white-bread nose and crisp mouthfeel. Hallertau Mittelfrüh hops add light-floral notes and balanced bitterness. Enjoy this easy-drinking nod to classic European Helles.
