Italian-Inspired Pizzas and Molly Moon’s for the New Year

Rosemary Potato Primo

As we ease into the new year, we find ourselves in the mood for Italian — as we are most of the year! Italians have a gift for transforming simple tastes and textures into something spectacular. It’s all about the right combinations in the proper proportions, prepared with the right techniques. Here in the Pacific Northwest, as we endure the big dark, comforting foods that warm hearts and tables help transform our seasonal blues into good times with families and friends. Both of our seasonal pizzas take their inspiration from Italian regional dishes.

Inspired by Rome's classic street pizza, Patate al Rosmarino, our Rosemary Potato Primo offers a simple yet sophisticated taste. It features thinly sliced roasted potatoes tossed with fragrant rosemary, paired with tender chicken marinated for a hint of sweetness and spice, complemented by pickled red onions and a blend of mozzarella and kasseri cheese, all on a roasted garlic oil base, finished with a sprinkle of red pepper flakes and fresh parsley after bake.

The Quattro is a tribute to the Northern Italian classic Quattro Formaggi. It blends four distinct cheeses: the nutty depth of Gruyère, the subtle smokiness of provolone, the smoothness of fontina, and the classic creaminess of mozzarella, all layered over our signature pizza sauce. We top the pie — in the signature colors of the Italian flag — with tomatoes and basil.

Molly Moon’s Yeti was so successful as a seasonal flavor last month that we’re keeping it around for another four weeks. It’s an indulgent blend of sweet cream ice cream swirled with vanilla bean caramel and mixed with Ku'l chocolate chips and Molly Moon’s special homemade honey granola!

For those over 21 with a taste for beer, consider our new T-Dome Pilsner from E9 Brewing Company — Tacoma’s original craft brewery — a traditional German-style pilsner with the absolutely right amount of hoppiness.
