Wine put Woodinville on the map, but there are a handful of folks carving out a market for distilleries in this nearby community. We caught up with Mo Heck, owner of Project V Distillery & Sausage Company, as she was heading back to town from her family's wheat fields. Going from grain to glass just wasn't enough for this Woodinville-based distiller. Wanting to take her experience full circle, Mo donates spent grain from alcohol production to nearby Bucking Boar Farm and then sells the pork yields in her tasting room.

What led you to the distillery business?

Lots of illegal practice at home.

How did you come to partner with Bucking Boar Farm?

I did not want to throw away perfectly good animal feed. When I was distilling at home, I would give the spent grain to my chickens. After opening Project V, we needed to go bigger.

How did you come up with the Single Silo Chai Infused Vodka?

The chai was one of many, many infusions we tried. Most of them were good, but the chai knocked our socks off!

What's your favorite cocktail to mix at home?

The Dutch Henry: 1 part Single Silo Vodka, 1 part cucumber simple syrup, 1 part pink grapefruit juice and cucumber garnish.

When can we expect your whiskey to debut?

Our whiskey will be available in early 2014. It's aging well!
